Christmas Salad with Citrus-Champagne Vinaigrette

Ingredients
Salad

  • 5 ounces of salad greens (such as spring mix or sweet baby lettuce mix)
  • 2 navel oranges (about 11-12 ounces each, or 4 smaller navel oranges, about 6 ounces each), peeled and cut into sections (see directions for how to supreme an orange in the post above)
  • 4 ounces shelled, roasted and salted pistachios (about a scant cup)
  • 4 ounces pomegranate arils (a 4.3-ounce container is fine, drained)
  • 2 ounces crumbled goat cheese (about a scant 1/2 cup)

Dressing

  • 5 tablespoons fresh-squeezed orange juice (from about half a large navel orange)
  • 4 teaspoons honey
  • 3 1/2 teaspoons champagne vinegar
  • 1 tablespoon canola oil
  • 1/2 teaspoon smooth dijon mustard
  • 1/8 teaspoon kosher salt
  • 1/16 teaspoon black pepper

Gin &Appletiser a refreshing Christmas Cocktail

A fruity twist on a gin & tonic, this long refreshing cocktail is lightly spiced and perfect for a Christmas party. Easy to make and serve over ice.  Take out the cinnamon stick and serve it in the summer too!

Ingredients
  • Cranberries - I used frozen
  • Filtered water
  • 50 ml / 2 shots of gin - chilled use a branded label, but no need to splash out on premium
  • 250 ml Appletiser original - chilled
  • 3 Cranberry ice cubes
  • Cinnamon stick
  • Slice apple
  • Wedge of lime

  1. Place 4 cranberries in each compartment of an ice cube tray, top up with distilled water and freeze overnight. If the cranberries float, half fill the tray, allow to freeze then top up with more water.

Christmas Tree Cheese Board

Wow your guests at your next get-together with this easy-to-assemble cheese board!

Ingredients

  • 200 g Cracker Barrel Extra Old Cheddar Cheese, cut into 3/4-inch cubes
  • 200 g Cracker Barrel Marble Cheddar Cheese, cut into 3/4-inch cubes
  • 200 g Cracker Barrel Monterey Jack Cheese, cut into 3/4-inch cubes
  • 200 g Cracker Barrel Havarti Cheese, cut into 3/4-inch cubes
  • 100 g Cracker Barrel Mozzarella Cheese, cut into 3/4-inch cubes
  • 1 lb. (450 g) each seedless green and red grapes
  • 1 pkg. (40 g) fresh thyme sprigs
  • 2 Tbsp. Philadelphia Cream Cheese Product
  • 2 Tbsp. finely chopped fresh parsley
  • 1 piece celery (2 inch)

Bacon Wrapped Green Bean Bundles

Tender crisp green beans wrapped in bacon and brushed with a simple brown sugar glaze. These are easy enough for a weeknight meal and pretty enough to impress your guests alongside a steak dinner!

Ingredients

  • Green beans (about 1 1/2 lbs) 6-8 beans per bundle
  • 1/2 teaspoon baking soda
  • 6 slices bacon
  • 1/4 teaspoon garlic powder
  • salt & pepper to taste
  • 1 tablespoon brown sugar

Instructions
  1. Preheat oven to 375 degrees F.
  2. Cook bacon on the stovetop until slightly cooked (You don't want it crispy). Reserve any drippings.
  3. Trim and wash green beans. Bring a large pot of water to a boil. Add baking soda. Add green beans and cook 3 minutes until tender crisp. Remove from boiling water and place in a bowl of ice water to stop cooking.
